Mushroom and Feta Stuffed Pita

Ingredients:

  • 200g button mushrooms (sliced)
  • 1 tbsp olive oil
  • 1 garlic clove (minced)
  • 1 tsp dried oregano
  • 1/4 cup crumbled feta cheese
  • 2 tbsp tahini sauce
  • 2 pita breads
  • A handful of fresh spinach or lettuce leaves
  • Salt and pepper to taste

Method of preparation:

  1. Heat olive oil in a pan and add garlic. Sauté for 1 minute, then add the mushrooms and oregano.
  2. Cook for about 5-7 minutes until the mushrooms are soft and slightly browned.
  3. Season with salt and pepper, and remove from heat.
  4. Warm the pita bread in a pan or oven.
  5. Spread tahini sauce inside the pita, fill with mushrooms, crumbled feta, and spinach or lettuce leaves.
  6. Serve as a light meal or snack, with a side of hummus or a salad.
