Oyster Mushroom Stir-Fry

Required Ingredients:

  • 1 cup dried oyster mushrooms
  • 1 finely chopped capsicum
  • 1 sliced carrot
  • ½ cup diced broccoli
  • 2 tablespoon soy sauce
  • 1 teaspoon vinegar
  • 1 teaspoon ginger - garlic paste
  • Salt and pepper as per taste

Method of preparation:

  1. Re hydrate the mushrooms by soaking them in warm water for 20 minutes.
  2. Drain and chop the mushrooms.
  3. Heat sesame oil in a pan and sauté ginger and garlic paste.
  4. Add capsicum, broccoli and carrot, stir-frying for 5 minutes.
  5. Add mushrooms and soy sauce, let cook for 2 minutes.
  6. Add vinegar and cook until vegetables are tender.
  7. Garnish with sesame seeds and serve with rice.
